Teriyaki chicken is one of the greatest exponents of Japanese cuisine in the western world, has a pleasant taste to almost all palates and moves away from the strong fishy flavors that characterize Japanese food.

The word Teriyaki is the fusion of the words Tari, which means gloss or varnish, and Yaki, which refers to the cooking method, either on the grill or in the oven. Tare is the marinade made from soy, sake, and sugar that we use in this process. 

At this point you will imagine that there’s no way you can eat Teriyaki chicken during keto diet?! Because the delicious teriyaki sauce is full of sugar and hidden carbohydrates, the answer is YES, but don’t worry, we have prepared our version of the keto teriyaki sauce without sugar, but with pleasant texture and flavor. 

You just have to prepare the sauce, marinate the chicken and accompany it with the keto vegetables of your choice.

Step 1

For this recipe, it is essential to prepare the Teriyaki sauce first since in it we will marinate the chicken.

  • Mix all the ingredients, except Xanthan gum, and place them in a medium pot, heat it over medium heat until the sauce has the desired consistency, cooking takes between 5 to 10 minutes
  • Before finishing cooking, add the diluted gum in warm water You can add some water if it was too thick.
  • Very carefully, remove the spicy clove and let it cool.

Cut the chicken breast into cubes about an inch thick. Dry with kitchen napkins, season with salt and pepper. 

Place the chicken in a medium glass bowl and cover with half of the teriyaki sauce. 

Bring the covered chicken to the refrigerator for about two hours while it is marinade.

Step 3

In a large skillet or wok place the oil, when it is hot add the chicken cubes one by one so that they are separated from each other. 

Step 4

Let them brown on all sides, add the rest of the teriyaki sauce and turn off the kitchen. Let stand covered.

Serving

A few minutes before serving, sprinkle with sesame seeds and chopped scallions.

If you wish, and as a variation to this recipe you can add a cup of broccoli stems when you start cooking the chicken.

  • 21 oz One large chicken breast
  • 2 tablespoons Avocado oil
  • 1 teaspoon Sesame seeds
  • 2 tablespoons Finely chopped chives
  • Salt and pepper to taste

The Teriyaki Sauce

  • 1/4 cup Soy sauce (make sure it's low-carb)
  • 1 tablespoon Avocado oil
  • 1 cup Water
  • 1 tablespoon Vinegar
  • 1 teaspoon Ground ginger
  • 1 teaspoon Garlic powder
  • 1 Spicy glove
  • 3 envelopes Low-carb sweetener (we suggest Erythritol)
  • 1/4 teaspoon Xanthan gum
